Twig Farm’s Goat Tomme

Although this modest Vermont cheese operation has a herd of just twenty-five goats, it turns out half a dozen different cheeses with additional milk from neighboring farms. The Goat Tomme is a small drum of raw-milk cheese aged for about eighty days, with a natural rind and a semifirm texture. Its flavor is earthy with a characteristic goat tang.
