Because of their high acidity levels, white wines are a natural match for most cheeses. A wine with a buttery texture makes for pleasing cheese pairings, but almost any style of white, from crisp and dry to fruity and sweet, will find a mate. Heavily oaked Chardonnays are the exception, as they often have a bitter flavor that does not pair well with food.
