A simple reason explains why sparkling wines work marvelously with cheese: where cheese coats the mouth, the bright bubbles in the wine cleanse the palate, refreshing it after each bite. A creamy cheese, such as a triple-cream Brie, is an especially nice match, but salty and blue cheeses also do well with bubbles.
