Chopped herbs make a lovely filling - use chives, tarragon, chervil and parsley. Chopped ham and cheese is another classic variation but be careful with the amount of cheese. It can make the omelette runny Cooked chopped fresh tomatoes are also good but need to be cooked in butter until the moisture has cooked out. They should be on the dry side.
