The famous ‘burger cheese’ of the States, Monterey Jack is a semi-soft cheese with a perfect pH for melting, resulting in a uniform texture and stringiness. This cheese has a slight sweet lactic flavour but it is best utilised for its perfect melting capabilities and paired with bigger flavours.
