La Mancha is a barren terrain and the Manchega sheep is a sturdy creature, and this terroir reflects in the flavour and texture of Spain’s most popular cheese. Manchego is dry with a robust and spicy flavour that is best melted in a tapas-style grilled dish, or paired with marinated anchovies and paprika for a sensory delight like no other.
