  • About
  1. Lay the bird breast side up on a board.

  2. Using poultry shears or kitchen scissors, cut either side of the backbone to cut the backbone away.

  3. Turn the chicken so it is breast side up and flatten it slightly. Use the heel of your hand to press firmly along the breastbone.

  4. The breastbone and the wishbone will break and the bird will lie flat.
