These are common in Asian homes, and are no longer regarded as a novelty in the West, as many restaurants have made use of this marvellous Japanese invention. Electric models now also have clever features for keeping rice warm for up to an hour. These work on the principle of weight — when all the liquid evaporates, the inner container, which sits on a spring-loaded element, rises automatically, switching the appliance off.
