Chinese okra is similar in shape to American okra, but in taste it is like a cross between zucchini and cucumber, with a delicious, juicy bite. It can be stir-fried alone or with meats or fowl. It is available in Oriental markets from spring to summer and will keep in the refrigerator for about a week. The ribbed grooves must be pared before using.
