Chinese parsley has a pungent, musky, citruslike flavor and is similar to Italian flat-leaf parsley in appearance, with leaves more deeply cut and feathery. The leaves are minced or cut into lengths, depending on their use. To store, wash the fresh leaves in cold water, drain thoroughly, and wrap in paper towels. They will keep this way in the vegetable bin for several days. Chinese parsley is available in many ethnic markets and some supermarkets. Once you get used to its distinctive flavor, youโll find yourself using it in all the ways you use regular curly or Italian parsley.
