This aromatic, anise-flavored seed from the fennel plant adds a rich flavor to braising liquids, such as the one used for Soy Sauce Chicken, and to marinades. It is sold in packages, in dried form. Stored in a tightly closed jar, it lasts indefinitely. Use it in small amounts, as it is strong in flavor. Fennel seed is an excellent condiment and a fine complement to fish prepared in either a Western or an Eastern manner.
