Heavy malt sugar comes in ceramic crocks and is used for coating meat and fowl in dishes like Peking Duck or Barbecued Pork Strips. It imparts a wonderful sweet taste that’s not too heavy. It keeps indefinitely in the crock, but sometimes it hardens, depending on the temperature. Just place the crock in a little hot water to soften before using. Honey is a good substitute.
