Black mushrooms have a meaty, smoky flavor and are chewy in texture. They are dried and must be soaked in hot water until soft and the hard stems cut off. The most expensive mushrooms are the biggest, best-looking ones; for dishes in which the mushrooms are going to be sliced or chopped you can buy the less expensive ones.
