Peeling and Chopping Garlic

  1. Place a single clove of garlic on a cutting board and gently tap it with the side of a cleaver. This loosens the skin.

  2. The loosened skin should slip off easily.

  3. With the other hand out of the way, chop rapidly, keeping the cleaver perpendicular to the board. Stop occasionally to push the bits of garlic that have stuck to the cleaver back onto the board.
