Dried salted fish is soaked, boned, and minced, and then it’s ready to use.
- Soak the fish in warm water for about 30 minutes, until it is softened. Discard the water.
- Holding the fish bone side up, press on the backbone from underneath to make it pop out.
- Remove the bone and mince the fish. Add it to the other ingredients as specified in the recipe (see, for example, Steamed Pork Cake).
