Preparing Dried Salted Fish

Dried salted fish is soaked, boned, and minced, and then it’s ready to use.
  1. Soak the fish in warm water for about 30 minutes, until it is softened. Discard the water.

  2. Holding the fish bone side up, press on the backbone from underneath to make it pop out.

  3. Remove the bone and mince the fish. Add it to the other ingredients as specified in the recipe (see, for example, Steamed Pork Cake).
