Cocoa powder is the cheapest way of obtaining a chocolate flavour in cooking and can replace chocolate if necessary. Use 3 tablespoons of cocoa, 15 g (½ oz) of butter and 1 tablespoon of sugar for every 25 g (1 oz) of chocolate required. Drinking chocolate should not be substituted because it is too sweet.
