To make dark chocolate, sugar is added to the cocoa liquor and this is then kneaded into a dough. A good quality chocolate will consist of 70 percent cocoa solids and 30 percent sugar. To produce milk chocolate, different proportions of cocoa solids and sugar are used and milk powder is also added. White chocolate doesn’t contain any cocoa solids, just cocoa butter, milk solids, sugar, and vanilla.
