The hard gummy resin from the acacia tree, which is most commonly used in ice-cream to give it a chewy texture. It is a popular chewing gum, too. Mastika is also the name given to the mastic-flavoured rakΔ±. Mastic crystals, which are easily crushed with sugar to release the smell of the acacia bark, are sometimes stocked in Middle Eastern stores.
