Have on hand at least one large professional-size rubber or silicone spatula as well as the standard home size and a mini. The largest one is the very best thing for folding delicate, airy batters and scraping larger bowls. If you have no specialty kitchen shop near you, check for restaurant supply stores, which will usually let anyone come in and buy. A mini spatula is very handy for scraping small quantities of melted chocolate from small containers. I use the largest and the mini most of all.
