Chihuahua

Mexico’s favorite melting cheese, similar to a mild Cheddar or Jack. It is also called queso menonita, after the Mennonite communities of northern Mexico that first produced it. Unlike most Mexican cheeses, this mild semisoft cheese is pale yellow rather than white.
