Literally just that: the inner portion of the stem of palm trees. The ivory-colored cylinders are firm and smooth and the flavor is reminiscent of an artichoke heart. Widely available canned, they should be rinsed before using. Brazil is the biggest producer of hearts of palm, while the Dominican Republic remains the largest consumer.
