Allium sativum, GARLIC

CULTIVATION A hardy perennial, garlic has aromatic, narrow, green leaves and white flowers in its second summer of growth. It reaches 30-45 cm (12-18 in) and prefers well-drained, moderately fertile soil and full sun.

Propagate it by planting the cloves of garlic in early spring or late autumn. Grow it as a companion plant in fruit and vegetable gardens to reduce aphid activity. Harvest it in late summer when the top growth has shrivelled, digging up the heads of garlic. Dry the heads outside for several days, then tie them in bundles or plaits and store in a cool, dry, dark place until needed. A useful garden, border and container herb.
