Amoracia rusticana, HORSERADISH

CULTIVATION The horseradish is a hardy perennial with long, elliptical, dark-green leaves and small, star-shaped white flowers in midsummer. It grows to a height of 45-60cm (18-24in) and the roots generally grow from 15 to 30cm (6 to 12m) long. The horseradish prefers fertile, moist soil and light shade and to be planted 30cm (1ft) from its neighbour. Propagate it by sowing seeds or dividing the plant or taking cuttings in spring. Harvest the small, tender leaves in spring, and the roots all year round, whenever the ground is workable. Dig up the whole root and remove the top growth and peel before using. In cold areas with severe winters, store freshly-dug roots in a box of damp sand until needed.
