CULTIVATION Winter savory is a hardy evergreen perennial with aromatic, narrow, dull-green leaves and pale mauve flowers in late summer. Reaching 30cm (1ft), it prefers well-drained, alkaline soil and full sun. Propagate it by sowing seeds or dividing the plant in late summer, planting them 30cm (1ft) apart. Harvest the leaves at any time and the flowers when they bloom. Winter savory is an attractive and useful garden, border and edging herb. Recommended varieties Creeping winter savory, S. repanda.
