Snipe enjoys a similar gastronomic reputation as the beccaccia or woodcock. As with the woodcock, it cannot be raised commercially, which might in part contribute to its popularity. The snipe can be found in estuaries and lakes, where it rests while on its migration in spring and autumn. It is particularly sought-after in the autumn, when it is good and fat after a summer of feeding. The dimensions of this bird are similar to that of the woodcock and, as with its cousin, one bird provides a good meal for one person. It is prepared and cooked in a similar way to the woodcock.
