Tongue is popular all over Italy. Veal tongue is the most tender and is usually boiled and served sliced with an acidic sauce, tuna fish sauce or salsa verde. Tongue is an important ingredient in a classic bollito misto. To achieve the vivid red colour characteristic of the meat it needs to be pickled in a salt solution for several hours and then boiled until tender. When buying tongue, make sure it is already pickled.
