Pastiera is an Easter cake, made with whole-grain wheat and ricotta to symbolize wealth; for this reason they are often made in pairs, so there is one left to give to a loved one. The preparation starts long before Easter, as the wheat has to be soaked in water for at least a week to soften it, although it is sometimes possible to buy presoaked wheat.
