Jacket Potatoes with any of the serving suggestions given, especially vegan butter and grated hard vegan cheese; hummus, or salad leaves. These do take a bit longer than 30 minutes to cook (about 1 hour), but are so easy I’m including them. You can speed them up (to 30–40 minutes) if you halve the potatoes lengthways before cooking. Brush the cut surface with a little olive oil and bake on a roasting tin (pan) – this way, they’ll also have a lovely crisp side, like a roast potato.
