Broccoli heads

Broccoli heads trim off the stem – this can actually be peeled, sliced and cooked with the top of the broccoli (I rather like it!). Cut the broccoli into chunky pieces or slices, cook in a little boiling water, as above, until just tender: only a few minutes, don’t let it get soggy.
