Courgettes (zucchini) ‘top and tail’ baby ones and cook in a little boiling water until just tender, as described above; or toss in olive oil and roast as for Cauliflower. Alternatively, mix with sliced aubergine (eggplant), red onions, red and yellow (bell) peppers, 1–2 whole peeled garlic cloves and 2–3 tbsp olive oil to coat; roast at 200°C/400°F/gas mark 6, for 40 minutes until golden brown and tender.
