Potatoes rinse baby new potatoes and boil in enough water to cover until just tender, 10-15 minutes (don’t let them get soggy), then toss in olive oil or vegan butter and serve with some chopped fresh parsley, mint or dill. Older potatoes can be cut into suitably sized pieces and cooked in the same way, then drained and fried in olive oil until golden and crisp or mashed with vegan butter and some plant milk and salt and pepper to taste.
