You can buy this popular Moroccan flavouring, or you can make it yourself by mixing together: 1½ teaspoons ground coriander seeds, 1¼ teaspoons ground cinnamon, 1 teaspoon paprika, ¾ teaspoon cumin seeds, ½ teaspoon crushed chilli flakes, ½ teaspoon ground cardamom, ½ teaspoon ground ginger and ½ teaspoon ground turmeric.
