Every Asian cuisine has some variation on this condiment, which is a blend of hot chiles, garlic, vinegar, and sometimes other spices. Asian chili-garlic sauce is a staple in my pantry and I find I use it as much as I use salt and pepper. It’s generally sold in glass jars; the Lee Kum Kee brand made in Hong Kong is one of my favorites and widely available. Try several and pick the one you like best (you can give the others to your neighbors!).
