Miso, a rich, salty paste made from fermented soybeans and other grains, is available in the refrigerator section of most health and natural foods stores and certainly in Asian (especially Japanese) markets. for a description of various types. If it comes in a nonresealable container, transfer the leftovers to a clean glass jar with a tight-fitting lid. Miso should be refrigerated; it will keep indefinitely.
