Panko are Japanese bread crumbs that have a lighter and coarser texture—almost more like a flake—than the commercial dried bread crumbs we’re familiar with. They’re perfect for breaded and fried food, since they brown and crisp quickly and keep their crunchy texture even after sitting for a while. Panko is widely available in Asian markets and increasingly in supermarkets because in recent years American chefs have talked about it so much.
