Ancho

My favorite all-purpose pure chile powder is made from the ancho chile. It’s a medium-hot chile with a rich, round, almost sweet fruity flavor. In Mexico, fresh chiles have different names than their dried counterparts. A dried ancho is made from a fresh poblano.
