To toast garlic, separate the cloves but don’t peel them. In a dry (oil-free) sauté pan, toast the garlic over moderate heat for 3 or 4 minutes or until they have brown spots on all sides. The husk will now slip off very easily. Toasting adds a rich, nutty flavor and moderates the harshness of the raw garlic. Store tightly covered in the refrigerator for up to 10 days.
