Also a good Toasted Sesame Oil. Look at the label and pick one that is 100 percent sesame. Some brands blend sesame with a neutral oil such as canola, because many people find pure sesame oil pretty overpowering, which it can be if you use too much. So don’t use too much.

You don’t have to stop there. A broad range of organic, cold- and expeller-pressed oils is available from Spectrum Naturals, a producer of which I’m especially fond. One of my favorites is their true corn oil, with the flavor and color of real corn. I’ve used it in the Wild Mushroom Salad recipe.
