To clarify butter, warm it over low heat until completely melted. With a small ladle or spoon, skim off and discard the white milky bits that come to the top. Very slowly and carefully, pour the clear yellow liquid (the clarified butter) through a fine-mesh sieve, leaving the milky sediment behind. Discard the sediment.
