Another member of the chicory family, escarole is one of the most bitter greens. Be sure to cut off and discard any dark green parts, which tend to be tough and just too bitter. The pale green and yellow leaves are great dressed with a full-flavored vinaigrette, ideally one with a lot of mustard in it.
