This tiny, delicate green, also known as lamb’s lettuce, is a standard winter salad item in France, where it is sold everywhere. In the United States, it seems to appear only in fancier groceries and is usually underdeveloped, so you don’t get much for your money. It may be the most delicate green there is—it often has the faint scent of roses—so don’t serve it with an aggressive dressing.
