Left-over cooked pasta, beans, and grains reheat uncertainly, but make great fillers for tossed salads. They can be combined with tomatoes, grilled and peeled peppers, chiles, herbs, cubes of chicken or turkey or other meats, or shellfish such as shrimp or lobster—the list goes on. Dress them with the best olive oil and a tablespoon or two of lemon juice or vinegar.
