In the United States, you will find Dungeness crab on the West Coast and blue crab (both hard and soft shell), Jonah crab, and peekytoe crab on the East Coast. Because most snow crab and king crab are frozen where they are caught (in Alaska), you will find them nearly everywhere. Occasionally, however, you will find them fresh at a sushi bar (the crab is cooked), which is a delight not to be missed.
Most crab is simply boiled in a big pot of water and the meat picked out at the table. Soft-shell crabs are almost always sautéed to enhance their crispiness. King crab and snow crab legs are sometimes split lengthwise and broiled with butter.
