In many West Coast markets, Dungeness crabs are sold already cooked, but crab is so perishable that they are rarely as fresh as you want. You are better off buying a live crab and boiling it yourself, or buying a cooked crab in a place where it is boiled in front of you, such as on the docks of Fisherman’s Wharf in San Francisco.
