How to Make Pasta Dough by Hand

  • About
  1. Form the flour into a well and break in the eggs. Add olive oil.

  2. Stir the eggs around with your fingers, breaking up the eggs and eroding the inside walls of the flour.

  3. Drag more flour from the walls into the eggs.

  4. Continue to pull flour from the walls until a dough starts to form.

  5. Use a cleaver blade or a pastry scraper to pull up the dough and work it together. If there is still loose flour on the board, add another egg yolk or and then the white if necessary.

  6. Continue to work the dough until it comes together in a ball.
