How to Cut Pasta by Hand and by Machine

  1. To cut fettuccine on a pasta machine, pass a sheet of pasta through the wider cutter.

  2. Shape the pasta into a mound as it comes out of the machine. Sprinkle with flour to prevent sticking.

  3. To cut pasta noodles by hand, dust the pasta sheet with flour.

  4. Roll the floured pasta sheet into a cylinder, and cut crosswise into the width you want.

  5. Shape the noodles into mounds and sprinkle with flour to prevent sticking.

  6. To cut pasta into rounds for tortellini or other stuffed pastas, put the pasta sheets on a floured kitchen towel, which allows the cutter to sever the pasta without fusing it with the work surface. Cut out rounds with a cookie or biscuit cutter.
