How to Shape a Basic Pullman Loaf

  • About
  1. Press the dough into a rectangle.

  2. Fold the right side of the rectangle into the center.

  3. Fold the other side over.

  4. With the flap facing you, roll the top of the dough toward you to form a cylinder.

  5. Press down along the front of the cylinder to firm it up.

  6. Roll on the cylinder to elongate it.

  7. Fold down the ends of the cylinder.

  8. Place the dough in an oiled loaf pan.

  9. Cover with plastic wrap and let rise until slightly above the rim of the pan.
