- First, begin to stretch the dough mass into an oblong shape.

- Form the dough into a baguette by shaping it into a sausage.

- Fold the sides in toward the middle and press down.

- Arrange the loaves on nonstick sheet pans, cover with oiled plastic wrap, and let rise.

- Just before baking, make 2 or 3 diagonal slashes across the top of each loaf.
