Some bakers let bread dough rest for a period, sometimes overnight, in the refrigerator. This helps the dough develop flavor and also creates greater flexibility in the baking schedule. In other words, you can make the dough, let it rise overnight in the refrigerator, and then bake it when you have time the following day.
