How to Roll Flaky Dough

  • About
  1. Roll out the dough into a long rectangle and fold the ends in to almost meet in the center.

  2. Fold one half over the other to make a square packet with four layers.

  3. Roll out the packet into a rectangle. Transfer the rectangle to a baking sheet, cover with plastic wrap and refrigerate. When chilled, fold the dough again into a packet, hammer with a rolling pin, and then roll out for the pie.
